Here’s a delicious and vibrant recipe for Steak Salad with Goat Cheese and Arugula:
Ingredients:
- Steak (such as flank, ribeye, or sirloin) – 1 lb (about 2 steaks, depending on size)
- Olive oil – 2 tablespoons (for grilling)
- Salt – to taste
- Black pepper – to taste
- Garlic powder – 1/2 teaspoon
- Arugula – 4 cups (fresh)
- Goat cheese – 4 oz, crumbled
- Cherry tomatoes – 1 cup, halved
- Cucumber – 1/2, sliced
- Red onion – 1/4, thinly sliced
- Avocado – 1, sliced (optional, for extra creaminess)
- Walnuts or pecans – 1/4 cup, toasted (optional, for crunch)
For the Dressing:
- Olive oil – 3 tablespoons
- Balsamic vinegar – 1 tablespoon
- Dijon mustard – 1 teaspoon
- Honey – 1 teaspoon (optional, for a touch of sweetness)
- Salt – to taste
- Black pepper – to taste
Instructions:
1. Prepare the steak:
- Preheat your grill or skillet over medium-high heat. Rub both sides of the steak with olive oil and season generously with salt, black pepper, and garlic powder.
- Grill or cook the steak for about 4-6 minutes per side (depending on thickness) for medium-rare, or adjust to your preferred level of doneness. Use a meat thermometer if needed: 130°F (54°C) for medium-rare, 140°F (60°C) for medium.
- Remove the steak from the grill and let it rest for 5-10 minutes before slicing.
2. Make the dressing:
- In a small bowl or jar, whisk together the olive oil, balsamic vinegar, Dijon mustard, honey (if using), salt, and black pepper. Taste and adjust seasoning as needed.
3. Assemble the salad:
- In a large bowl, add the arugula, cherry tomatoes, cucumber, red onion, and avocado slices (if using).
- Drizzle some of the dressing over the salad and toss gently to combine.
- Slice the rested steak thinly against the grain and place the slices on top of the salad.
4. Top with goat cheese:
- Sprinkle crumbled goat cheese over the salad and add toasted walnuts or pecans if desired for extra texture and flavor.
5. Serve:
- Serve immediately with extra dressing on the side if desired.
This Steak Salad with Goat Cheese and Arugula makes for a satisfying and nutritious meal, combining the richness of steak with the peppery freshness of arugula and the creaminess of goat cheese! Enjoy!
